Dates are one of the oldest cultivated fruits in the world, and each variety has its own size, texture and flavor. At Devik International Inc. we focus on three varieties: rich and soft Medjool, delicate and firm Deglet Nour, and honey-sweet Halawi. This guide to our dates will help you understand the differences, choose the right date for eating, cooking or gifting, and keep your dates fresh.

Medjool dates: the king of dates
Medjool is the best-known date in the world. The fruit is large, plump and soft, with thin skin and thick flesh that tastes of caramel and brown sugar. Grown in the hot, dry desert, Medjool dates dry naturally on the palm, which locks in their moisture and sweetness. They are a well-known source of dietary fiber and potassium. We offer Medjool dates in Delilah brand 2 lb (908 g) retail boxes, 1 kg organic and premium gift boxes, and 5 kg (11 lb) cartons for larger buyers. Read our full guide to Medjool dates.
Deglet Nour dates: the “date of light”
Deglet Nour means “date of light” in Arabic, a nod to the fruit’s translucent amber glow. It is a semi-dry date that originated in the oases of Algeria and Tunisia. The texture is firm and the sweetness is delicate, so it holds its shape in the oven and chops cleanly, making it a baker’s favorite. It also pairs particularly well with fresh fruit and cheese. Halawi dates: nature’s candy
Halawi takes its name from the Arabic word for “sweet.” This soft date, which originated in Iraq, is smaller and lighter in color than a Medjool, with a creamy texture and caramel-honey flavor. Halawi dates were also studied in a 2009 pilot study on dates and blood sugar and blood fats. Discover Halawi dates and the research.
How dates grow and are harvested
Dates grow in heavy bunches on the date palm, a tree that needs long, hot, dry summers and plenty of water at its roots. Growers pollinate the flowers by hand in spring, thin the young fruit so the remaining dates can grow large, and often cover the bunches to protect them from birds and rain. In the Northern Hemisphere the harvest usually runs from late summer into winter. Soft varieties such as Medjool and Halawi are picked by hand, often several times per bunch as individual fruits ripen, while semi-dry varieties such as Deglet Nour can be harvested as whole strands. After harvest the dates are cleaned, sorted by size and quality, and packed.
How to choose the right date
- For snacking and gifts: choose Medjool for its size and rich flavor, or Halawi for a smaller, very sweet bite.
- For baking and cooking: choose Deglet Nour, which keeps its shape and doesn’t overpower other ingredients.
- For smoothies, sauces and date paste: choose a soft date such as Medjool or Halawi, which blends smoothly.
- For cheese and fruit platters: all three work well; Deglet Nour branch dates make a striking centerpiece.
What to look for when buying dates
Good dates look plump and glossy, feel soft or pleasantly firm (depending on the variety), and smell sweet and clean. Avoid fruit that is very hard, cracked open, or smells sour. A light white sugar bloom on the skin is natural and harmless. Quality grades such as “Class I” indicate well-formed fruit with only slight skin defects.
How to store dates
Dates are a fresh fruit that has dried naturally, so they keep well:
- Room temperature: in an airtight container in a cool, dry place for a few weeks.
- Refrigerator: several months; best for soft dates like Medjool and Halawi.
- Freezer: up to a year. Thaw at room temperature before serving.
Dates absorb strong smells, so keep them sealed and away from foods such as onions and garlic.
Dates and a balanced diet
All dates provide natural sugars together with fiber, potassium and magnesium, which makes them a convenient source of energy and a popular choice for breaking the fast during Ramadan. Because they are naturally high in sugar, enjoy them in sensible portions, and if you are managing blood sugar, ask your doctor or dietitian for advice.
Wholesale and retail inquiries
We supply dates in retail boxes and larger cartons for stores, distributors and foodservice buyers. Availability of each variety and pack size depends on the harvest season. To ask about products, pack sizes, or pricing, please contact Devik International.
Frequently asked questions about dates
What is the difference between Medjool and Deglet Nour dates?
Medjool dates are larger, softer and richer in flavor, while Deglet Nour dates are firmer, smaller and more delicately sweet, which makes them better for baking.
Which date variety is the sweetest?
Soft dates such as Halawi and Medjool taste the sweetest. Deglet Nour has a milder, honey-like sweetness.
Do dates need to be refrigerated?
Not always, but refrigeration keeps soft dates fresh for months. For short periods, an airtight container in a cool, dry place is fine.
Are dates dried fruit?
Most dates you buy are fully ripened fruit that has dried naturally on the palm. They are not dried artificially like many other dried fruits, which is why soft varieties stay moist.
